leftover essentials: taco/tater dip
Not exactly sure what to call this, but Taco/Tater Dip is what I came up with, and I am sticking with it. Anyway, it is just a few simple ingredients that work very well together. I am using mash potatoes as the base, but I believe rice would work well also. This was primarily made up of leftovers from a Mexican themed party I had the other day. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- potatoes or rice
- taco meat
- cheese, shredded
- taco sauce or salsa
- 1 medium tomato, diced
How To Make leftover essentials: taco/tater dip

Step 1PREP/PREPARE

Step 2You will need a small ovenproof pan or bowl to make this recipe. If you have a ramakin that would be excellent.

Step 3I did not list portions, but I would say that the taco meat and the potatoes or rice should be 50/50, and use enough cheese to cover the top, leaving the edges open for the diced tomato.

Step 4Gather your ingredients (mise en place).

Step 5Place a rack in the middle position and preheat the oven to 350f/175c.

Step 6Add the mash taters or rice to the bottom of your ovenproof pan or dish.

Step 7To give the dish a bit of a kick, mix some salsa in with the taters or rice.

Step 8Top with ground taco meat.

Step 9Add cheese over the top.

Step 10Place into the preheated oven and bake until the dish is heated through, and the cheese is bubbly, about 15 – 20 minutes.

Step 11Add the chopped tomatoes.

Step 13Serve with some sturdy chips or toasted bread. Enjoy.
