leftover essentials: taco/tater dip

Not exactly sure what to call this, but Taco/Tater Dip is what I came up with, and I am sticking with it. Anyway, it is just a few simple ingredients that work very well together. I am using mash potatoes as the base, but I believe rice would work well also. This was primarily made up of leftovers from a Mexican themed party I had the other day. So, you ready… Let’s get into the kitchen.

  • PLAN/PURCHASE
  • potatoes or rice
  • taco meat
  • cheese, shredded
  • taco sauce or salsa
  • 1 md
    tomato, diced

How To Make leftover essentials: taco/tater dip

    You will need a small ovenproof pan or bowl to make this recipe. If you have a ramakin that would be excellent.

    I did not list portions, but I would say that the taco meat and the potatoes or rice should be 50/50, and use enough cheese to cover the top, leaving the edges open for the diced tomato.

    Gather your ingredients (mise en place).

    Place a rack in the middle position and preheat the oven to 350f/175c.

    Add the mash taters or rice to the bottom of your ovenproof pan or dish.

    To give the dish a bit of a kick, mix some salsa in with the taters or rice.

    Top with ground taco meat.

    Add cheese over the top.

    Place into the preheated oven and bake until the dish is heated through, and the cheese is bubbly, about 15 – 20 minutes.
