A friend gave me a few pounds of ground lamb that I had no idea what to do with as we're not big lamb eaters. Even my finicky family polishes these off in no time. The addition of the sweet preserves is a wonderful addition to the savory lamb and cheese.

Ingredients

  • 1 pound ground lamb
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 package feta cheese crumbles (5 ounces)
  • 1/2 cup apricot preserves
  • 2 packages crescent rolls

How To Make lamb roll ups

  • Step 1
    Brown lamb and onion in large frying pan. While lamb is browning add salt and pepper. Drain off excess fat. Stir in cheese.
  • Step 2
    Gently open both packages of crescents and remove dough, keeping roll intact. On a lightly floured surface carefully unroll as one piece. Press seams together to make one large dough. Roll it out to make approximately 17x10 inch rectangle.
  • Step 3
    Spread the preserves on top of the crescent rectangle. Top with the meat and onion mixture.
  • Step 4
    From the longer side of the rectangle, carefully roll the dough. With a bread knife, slice it into 1 to 1 1/2 inch pieces and place on baking sheet with space between each roll up.
  • Step 5
    Bake in a 375 degree oven 12-15 minutes or until the dough turns golden brown.
