How To Make ~ easy mexican casserole ~
-
Step 1Preheat oven to 350 degree F. In a large skillet, add ground beef and seasoning. Cook until beef is no longer pink, stirring to break up. Add corn and salsa, cook only until heated through. Stir in half of the olives.
-
Step 2Mix sour cream and cottage cheese in a medium bowl.
-
Step 3In a 2 - 3 quart casserole dish, layer 2 cups of the tortilla chips, next half of meat mixture, 1 cup cheese and spread with half of sour cream mixture. Repeat, ending with sour cream. Cover with foil and bake for 40 - 45 minuted or until bubbly and heated through.
-
Step 4Sprinkle with remaining cheese, tomatoes, olives and jalapeño slices if using. I also lined the edge of dish with remaining chips. Place back in oven for another 10 minutes until cheese is melted.
-
Step 5Let set up a few minutes before plating. Salt and pepper if desired.
