chinese meatballs & sauce, barb
We love meatball appetizers when we get together with the in laws. This one sounds great, homemade (not frozen ones), and with a sauce to enjoy! Can't wait to try this one with them!

Ingredients
- MEATBALLS
- 1 pound hamburger
- 3/4 cup finely chopped celery
- 1/4 cup finely chopped almonds
- 1 clove garlic, pressed (i use minced garlic from fridge)
- 1 teaspoon salt
- 1/2 cup soft bread crumbs
- 1 tablespoon soy sauce
- 1/2 teaspoon accent
- 2 eggs, slightly beaten
- 1 teaspoon chinese spice (optional)
- 1 teaspoon finely chopped fresh ginger root (optional)
- SAUCE
- 1 diced green pepper
- 1 cup pineapple chunks, drained
- 1/2 cup pineapple juice (i would use the juice from chunks)
- 1 cup chicken broth
- 1/2 cup sugar
- 1/2 cup vinegar
- 3 tablespoons cornstarch
- 2 teaspoons soy sauce

Step 1Meatballs Mix all well. Make balls, small ones like cocktail size. Saute until cooked. Serve with sauce.

Step 2Sauce Cook all but pineapple and pepper until thick, stirring constantly. Pour over meatballs, cover and simmer incredibly slowly 45 min, or bake in 225 degrees same time. Add pineapple and pepper, simmer until heated.

Step 3Note: I would try this in a crockpot on low to take to the inlaws, and might consider the pre made meatballs for speed, adding sauce to crockpot.
