cheese and chorizo on toast
Recently discovered Spanish chorizo - very different form what I was accustomed to. If you cannot find Spanish chorizo, or Portuguese Linguica, you can use a firm, dry sausage. The flavor won't be quite the same, but it will still be good! Manchego cheese tends to be crumbly - slice as best you can!

Ingredients
- 1 crusty baguette, thinly sliced into 16 slices
- 1/4 pound manchego cheese, thinly sliced
- 1/2 pound spanish chorizo (not mexican - can substitute portuguese linguica)
- 3 green onions, garnish
How To Make cheese and chorizo on toast

Step 1Very lightly toast bread slices. They should just start to become golden.

Step 2Slice chorizo about 1/8 to 1/4 inch thick. In a hot skillet, fry chorizo for abut 5 minutes, flipping occasionally. Remove to paper towel lined plate.

Step 3While chorizo cooks, place cheese on each piece of toast. Add a few pieces of chorizo when it's ready.

Step 4Cut green part of the green onions. Sprinkle a few on each toast for garnish.
