- 1/2 cup blue cornmeal
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 - egg
- 1 cup milk
- 1/2 cup sugar
- 1 can refried beans
- 1 teaspoon ground cumin
- 1/2 pound ground beef
- - sour cream
- - chopped green onions
How To Make blue corncake appitizers

Step 1Mix first 8 ingredients together until smooth. On a hot buttered griddle fry 1 teaspoon portions until lightly browned on both sides (2 minutes). Set aside.

Step 2Warm beans with cumin added.

Step 3Fry beef and pour off oil. Leave as is or season with salsa.

Step 4To assemble take a corn cake and spread on beans with a little of the beef. Top with sour cream and a bit of onion. Serve at room temperature.
