    blue cornmeal
  • 1 1/2 c
    flour
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 c
    vegetable oil
  • 1
    egg
  • 1 c
    milk
  • 1/2 c
    sugar
  • 1 can(s)
    refried beans
  • 1 tsp
    ground cumin
  • 1/2 lb
    ground beef
  • ·
    sour cream
  • ·
    chopped green onions

How to Make Blue Corncake Appitizers

Step-by-Step

  1. Mix first 8 ingredients together until smooth. On a hot buttered griddle fry 1 teaspoon portions until lightly browned on both sides (2 minutes). Set aside.
  2. Warm beans with cumin added.
  3. Fry beef and pour off oil. Leave as is or season with salsa.
  4. To assemble take a corn cake and spread on beans with a little of the beef. Top with sour cream and a bit of onion. Serve at room temperature.
