- MARINADE
- 1 cup chicken stock
- 3 tablespoons adobo birria marinade
- 1/4 cup tomato sauce
- 4 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon cumin
- 20 wing sections
- salt and pepper
- DIPPING SAUCE
- 4 cups chicken broth
- 1/2 cup tomato sauce
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- chives, for serving
- lime wedges, for serving
How To Make birria wings with dipping sauce

Step 1Mix the ingredients for the marinade together. Season the wings with salt and pepper. Place wings in marinade and let marinate 4 to 6 hours.

Step 2Add all the ingredients for the dipping sauce in a saucepan. Bring to a boil. Reduce heat and let simmer 20 minutes until reduced. Strain and discard solids.

Step 3Preheat oven 400 degrees F. Place the wings on a baking sheet and brush with the marinade. Bake for 30 minutes, turning once.

Step 4Serve the wings garnished with chives and lime wedges and with the dipping sauce.
