My great-aunt Naomi made these every year when I was a child. I don't know which I liked better- eating the watermelon to get the rind or eating the pickles when they were finished! I am using her recipe and it doesn't say how many pints it makes.

10 lbs. watermelon rind
2 lbs. white sugar
1 qt. vinegar
1/2 oz. cloves
1 oz. cinnamon

How to Make Watermelon Pickles


  • 1Place cubed watermelon rind in a large enameled or stainless steel pot.
  • 2Cover with water and boil until tender. Drain.
  • 3Make syrup of sugar, vinegar, and spices. Be sure it's boiling hot.
  • 4Pour over watermelon rind boiling hot for three days in a row.
  • 5On the last day put rind and hot syrup in jars and seal.
