My great-aunt Naomi made these every year when I was a child. I don't know which I liked better- eating the watermelon to get the rind or eating the pickles when they were finished! I am using her recipe and it doesn't say how many pints it makes.

How to Make Watermelon Pickles

Step-by-Step

  1. Place cubed watermelon rind in a large enameled or stainless steel pot.
  2. Cover with water and boil until tender. Drain.
  3. Make syrup of sugar, vinegar, and spices. Be sure it's boiling hot.
  4. Pour over watermelon rind boiling hot for three days in a row.
  5. On the last day put rind and hot syrup in jars and seal.
