watermelon pickles

My great-aunt Naomi made these every year when I was a child. I don't know which I liked better- eating the watermelon to get the rind or eating the pickles when they were finished! I am using her recipe and it doesn't say how many pints it makes.

Ingredients

  • - 10 lbs. watermelon rind
  • - 2 lbs. white sugar
  • - 1 qt. vinegar
  • - 1/2 oz. cloves
  • - 1 oz. cinnamon
  • - water

How To Make watermelon pickles

  • Step 1
    Place cubed watermelon rind in a large enameled or stainless steel pot.
  • Step 2
    Cover with water and boil until tender. Drain.
  • Step 3
    Make syrup of sugar, vinegar, and spices. Be sure it's boiling hot.
  • Step 4
    Pour over watermelon rind boiling hot for three days in a row.
  • Step 5
    On the last day put rind and hot syrup in jars and seal.
