This is a recipe a friend of mine shared years ago, it is a big hit at family dinners and office parties. I am always asked " How do you make it?"

Ingredients

  • 3 cans pineapple/chunks
  • 1 1/2 cups sugar
  • 2 cups sharp cheese grated
  • 1 - ritz crackers/sleeve
  • 4 slices margarine or butter
  • YOU WILL NEED A 2 OR 2 1/2 QUART BAKING DISH

How To Make pineapple casserole

  • Step 1
    Drain pineapples, place into a bowl, add sugar while preparing the other ingredients allow sugar to melt DO NOT STIR. Crumble/crush Ritz Crackers * 1 Sleeve*, place to the side. Grate 2 cups of sharp cheese if you don't purchase pre-grated cheese & place to the side. Cut 3 or 4 pats of margarine/butter. This recipe calls for the margarine/butter, I do not use it. You can add the margarine/butter to the finished pineapple mixture or use it atop the crust.
  • Step 2
    Stir melted sugar pineapple mixture, it is ok if not all the sugar melted, add cheese & stir. Put mixture into baking dish, place crumbled crackers on top.
  • Step 3
    Bake at 350 approx 30 minutes or until brown.
  • Step 4
    Remove from oven and allow to cool 15 minutes, serve and enjoy! This reheats well and is equally good cold.
