I was helping with appetizers for a wedding and we wanted just one more. Someone mentioned a sweet version. I came up with this. The prep time includes draining the pineapple.

Ingredients

  • 8 oz
    cream cheese
  • 8 oz
    crushed pineapple, drained well
  • 1/4 c
    brown sugar
  • 1/2 c
    coconut
  • ·
    rum flavoring to taste
  • ·
    tortillas, flour

How to Make Pina Colada Pinwheels

Step-by-Step

  1. Drain the crushed pineapple. If you have cheese cloth you could use that or a fine mesh strainer. I squeezed out as much liquid as i could.
  2. Using an electric mixer or a spatula mix all the ingredients together. I started with about 1/4 tsp. rum flavoring and added until I liked the flavor.
  3. Spread on tortillas and roll up. Wrap in plastic wrap and let set at least an hour. Cut in about 1/2 in. slices. Electric knife works well. You could top with a 'shot' of canned whipped cream and a sprinkle of toasted coconut if you want it to look nice. (I did not have time to do that when I served them.
