pina colada pinwheels
I was helping with appetizers for a wedding and we wanted just one more. Someone mentioned a sweet version. I came up with this. The prep time includes draining the pineapple.

- 8 ounces cream cheese
- 8 ounces crushed pineapple, drained well
- 1/4 cup brown sugar
- 1/2 cup coconut
- - rum flavoring to taste
- - tortillas, flour
How To Make pina colada pinwheels

Step 1Drain the crushed pineapple. If you have cheese cloth you could use that or a fine mesh strainer. I squeezed out as much liquid as i could.

Step 2Using an electric mixer or a spatula mix all the ingredients together. I started with about 1/4 tsp. rum flavoring and added until I liked the flavor.

Step 3Spread on tortillas and roll up. Wrap in plastic wrap and let set at least an hour. Cut in about 1/2 in. slices. Electric knife works well. You could top with a 'shot' of canned whipped cream and a sprinkle of toasted coconut if you want it to look nice. (I did not have time to do that when I served them.
