cranberry cream cheese sweet potato chip

You can use many different ingredients in the topping and on the sweet potato chips. The chips can be chewy when serving is delayed. You can also bake 1/4" Sweet Potatoes and add the toppings as a side dish. If your chips are not crisp after the first baking; wait till they are fully cooled then place on foil lined baking sheet in 400 oven till crisp.

Ingredients

  • TOPPING
  • 1 bag cranberries, fresh
  • 1 can mandarin oranges
  • 1/2 cup coconut sugar
  • 1 package cream cheese
  • 1/2 cup pecans
  • 1/2 cup orange zest, fresh
  • SWEET POTATO CHIP
  • 2 large sweet potatoes
  • 2 tablespoons coconut oil
  • SWEET POTATO SEASONING
  • 1 tablespoon brown sugar
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon pepper
  • 1 teaspoon cornstarch
  • 1 teaspoon onion salt
  • 1 tablespoon garlic powder

How To Make cranberry cream cheese sweet potato chip

  • Step 1
    Place the cranberries, sugar in a food processor. Pulse on and off several times until cranberries are coarsely chopped. Don't over-process.
  • Step 2
    Add pecans pulse a few more times. Not too much, you want the pecans to be visible in relish. Warm on stove till softened and gels a bit. Transfer to a storage container and add mandarin orange halves cut in half. Refrigerate for at least 2 hours or till ready to use.
  • Step 3
    Line a baking sheet with aluminum foil. Set oven at 325 degrees.
  • Step 4
    Use a mandolin and slice the sweet potatoes evenly. Place in a gallon zip lock bag and toss with with olive oil to lightly coat.
  • Step 5
    Place the sliced sweet potatoes on the lined baking sheet and bake for 12 minutes, then turn and bake for additional 5, continue bake and rotate till edges brown.
  • Step 6
    Add the Sweet Potato seasonings to a gallon zip lock and shake. Add the Sweet Potato Chips and shake. Remove the chips from the seasoning.
  • Step 7
    Place a teaspoon of the whipped cream cheese on each chip and create a divot. Place a teaspoon of the cranberry in the divot.
