Ingredients

  • 2 medium sized lemons,limes or oranges
  • 1/2 cup sugar,divided
  • 2 tablespoons water

How To Make citrus zest

  • Step 1
    use vegetable peeler to remove zest from citrus. Discard white from the back of peel with a paring knife. Discard pith.
  • Step 2
    cut peel into 1/4 inch thick strips 3 inches long. About 40 strips per fruit.
  • Step 3
    Combine 1/4 cup sugar and 2 tablespoons of water in a saucepan to make a syrup.Bring mixture to a boil over medium heat,stirring constantly till sugar dissolves.
  • Step 4
    Add peel,cover,reduce heat,and simmer 3 minutes.Remove from heat and cool.
  • Step 5
    Strain in a strainer shaking off excess moisture. Discard liquid. Separate pieces of rind and allow to air dry on a sheet of wax paper.
  • Step 6
    Place remaining 1/4 cup of sugar and sitrus strips in a bowl toss well to coat.
