LaWanda's Zucchini Cheese
Surprisingly,I won! I've made a few changes during the years. For the original recipe,I made a batter,then dipped in breadcrumbs and fried. Sometimes I use Colby cheese instead of 2 different cheeses,I prefer jack to cheddar so if you prefer cheddar,the measurements can be changed.
- 2 c shredded monterrey jack cheese
- 1 c shredded cheddar cheese
- 1 c shredded zucchini,drained
- 1/2 c minced onion
- 2 eggs
- salt and pepper,to taste
- fine breadcrumbs
- canola oil
How to Make LaWanda's Zucchini Cheese
- 1Combine cheeses,zucchini and onion,mix well.Shape into rectangles 2 inches long and 1 inch thick. Cover;chill in refrigerator several hours or overnight. Or you can pat out the mixture and cut into shapes with a cookie cutter.
Combine flour,salt and pepper. Beat eggs,add salt and pepper. Dip zucchini in flour,then in egg,coat with breadcrumbs.Fry in hot oil until golden brown.Serve immediately.
