lawanda's zucchini cheese

Years ago,I won an Ebony contest with this recipe. I had just come from Seattle and had fried cheese for the first time. For the contest,zucchini must be used,so I added shredded zucchini to a fried cheese recipe from a cookbook I bought in Seattle. Surprisingly,I won! I've made a few changes during the years. For the original recipe,I made a batter,then dipped in breadcrumbs and fried. Sometimes I use Colby cheese instead of 2 different cheeses,I prefer jack to cheddar so if you prefer cheddar,the measurements can be changed.

- - 2 c shredded monterrey jack cheese
- - 1 c shredded cheddar cheese
- - 1 c shredded zucchini,drained
- - 1/2 c minced onion
- - flour
- - 2 eggs
- - salt and pepper,to taste
- - fine breadcrumbs
- - canola oil

Step 1Combine cheeses,zucchini and onion,mix well.Shape into rectangles 2 inches long and 1 inch thick. Cover;chill in refrigerator several hours or overnight. Or you can pat out the mixture and cut into shapes with a cookie cutter. Combine flour,salt and pepper. Beat eggs,add salt and pepper. Dip zucchini in flour,then in egg,coat with breadcrumbs.Fry in hot oil until golden brown.Serve immediately.
