Ingredients
- 1 - prepared pie pastry
- 8 ounces mozzarella cheese, shredded
- 3 - tomatoes, peeled and cut into 1/2 inch slices
- 1/2 cup chopped fresh basil
- - olive oil, extra virgin
How To Make yummy tomato tart

Step 1Fit the pie pasty into a 9 inch tart pan and trim and flute the edge. Bake at 450 degrees for 5 to 10 minutes. (Prick the crust all over with a fork prior to baking)

Step 2Sprinkle the cheese in the baked crust. Layer the tomatoes over the cheese. (Note: I do not peel the tomatoes). Sprinkle with basil. Drizzle with olive oil.

Step 3Bake at 350 degrees for 20 minutes or until golden brown.
