vidalia onion dip
Being from Georgia, Vidalia onions are a wonderful addition to your summertime! I bring home an empty dish every time I serve this. Served with Scoops corn chips is the best compliment! Don't worry about onion breath, pigs don't know pigs stink!! :) You can use regular cheddar if you like. There are no rules; it's all good. Nothing beats shredding your own cheeses. It melts like no other.

Ingredients
- 1 1/2 cups shredded white cheddar cheese
- 1 1/2 cups shredded mozzarella cheese
- 2 medium Vidalia onions, diced
- 1/2 cup mayonaise (Dukes)
- 1/2 package cream cheese, room temp
How To Make vidalia onion dip

Step 1Preheat oven to 375. Place cream cheese in a large mixing bowl with the shredded cheeses. Mix well.

Step 2Mix in your onion and mayonnaise, and mix it all up really good.

Step 3Place the mixture in a sprayed 8x8 (1.5-quart) casserole dish. Bake at 375 for 20 minutes. Serve with Frito-Lay Scoops corn chips! I have made this in advance, the day before, covering it in the fridge, and just popped it in the oven before my get-together.
