My friend Rhonda and I found these during a Christmas banquet in Mississippi so many years ago. I have made them for family friends and even in my catering for appetizers. They disappear quickly!

makes 48 to 60 mini muffins
Ingredients
- 8 oz boxes mediterranean feta cheese crumbles
- 12 oz packages swiss cheese
- 2 tablespoons mayonaise (as needed)
- 1/4 cup chopped green onions
- 1/3 bottle chopped cooked bacon, prefer turkey for less fat
- 1 dash salt and pepper
- 1/4 cup diced roma tomatoes
- 2 tablespoons fresh cilantro or parsley chopped(optional)
- 2 cans grands biscuits
How To Make tomato bacon surprise

Step 1Slice and chop Swiss cheese thin. Cook bacon until crisp and chop. In medium mixing bowl combine ingredients and mix til just mixed. Only add enough mayonnaise to hold mixture together.

Step 2Open can of Grands Biscuits and cut in quarters. Roll each in a ball and flatten and place in mini muffin tins. Only do one can at a time as they will swell and be harder to fill.

Step 3Fill with teaspoonfuls of mixture. Do not overfill. Bake at 350 for 10 min. or until lightly browned. You will have mixture left over but it can freeze or refrigerate well for future use.
