Ingredients For texas party quiches

5 eggs beaten

1/4 cup flour

1/4 cup butter or margarine, melted

1/4 cup red bell pepper, finely chopped

1 can chopped green chilies, drained, 4 oz

2 cups grated monterey jack cheese

1/4 cup cheddar cheese, optional

one jar salsa or topping, optional
-
1 cup cottage cheese

1/2 tsp. baking powder

4 tbsp. finely chopped green onions

1 pkg. refrigerator biscuits
How To Make texas party quiches

1Separate biscuits land cut in half horizontally, making 20 pieces of thin pastry. Spray ramekins with a little nonstick cooking spray. Put a piece of pastry into each ramekin, press down. Bake for 10 minutes sat 350 til just brown and slightly puffy. You can make the quiche without the pastry crust if you like.

2In large bowl, mix beaten eggs and cottage cheese. Beat in flour, baking powder and melted butter. Stir in Monterey jack cheese, green onions red pepper and chiles. Mix well. Pour mixture equally into ramekins. Sprinkle a few pieces of cheddar cheese on top (optional). Bake in oven at 350 for 20 minutes or til done. Serve warm, plain or with salsa on top or in small side bowl. Enjoy.
