Combine the water, butter and salt in a saucepan and bring to a boil.
Add the flour all at once and mix well.
Cook until smooth, stirring constantly.
Remove from heat and place the mixture in a food processor container.
Add the eggs 1 at a time, processing until smooth after each addition.
Add the cheese and sun dried tomatoes and stir until mixed.
Drop by tablespoons onto an ungreased baking sheet.
Bake at 425 for 10 minutes.
Reduce the oven temperature to 350. Bake for 5 to 10 minutes longer or until golden brown.
Remove to wire rack to cool.
