stuffed jalapenos

This is a recipe I got from a friend of mine many years ago. This was many years before the current grilled, bacon-wrapped, cream cheese filled jalapeno pepper recipe was popular. I like this recipe just as well and it is quicker and easier. These are great served on a nice party buffet, game-day gathering, office luncheon or any other gathering.

Ingredients

  • 1 can (26 oz) whole pickled jalapeno peppers
  • 1 package (8 oz) cream cheese, softened
  • 2 tablespoons chives (dehydrated)
  • 1 tablespoon minced pimiento
  • 1/4 cup mayonaise or salad dressing
  • OPTIONAL ADD-INS:
  • - finely diced ham
  • - finely chopped, cooked shrimp
  • - finely chopped crab meat
  • - finely chopped crispy bacon

How To Make stuffed jalapenos

  • Step 1
    Drain the jalapeno peppers.
  • Step 2
    Cut each pepper in half and remove the seeds and membrane. Rinse and pat dry with papper towels.
  • Step 3
    In medium bowl, combine room temperature cream cheese, mayonnaise, chives and pimientos together until combined.
  • Step 4
    Fill each half with the cream cheese mixture and place on desired serving platter.
  • Step 5
    Cover and place in the refrigerator for at least an hour so the flavors can blend.
  • Step 6
    You can add any optional ingredient that you like such as the ones listed above.
