Ingredients
- 1 - diced onion
- 2-3 - roma tomatoes, diced
- 5-6 - serrano chiles, diced
- 1 cup pale lager (beer)
- 1 tablespoon oregano, dried
- 1 teaspoon black pepper
- 1 teaspoon salt
- 8 ounces sharp cheddar cheese, fine shredded
- 8 ounces monterey jack cheese, shredded
How To Make spicy queso

Step 1Sauté veggie until they are soft and the onions are translucent in a dash of olive oil over medium heat in a heat resistant fry pan.

Step 2Set oven to broil.

Step 3Add spices, mix.

Step 4Add beer, reduce heat to medium low and simmer until about half of the liquid has cooked away.

Step 5Add handfuls of cheese to mix and stir constantly until thoroughly melted and blended. Repeat until all the cheese is mixed in.

Step 6Place fry pan in oven uncovered for 5-10 mins. Until slightly browned.

Step 7Serve with tortilla chips.
