oregano, dried

sharp cheddar cheese, fine shredded
8 oz
monterey jack cheese, shredded

How to Make Spicy Queso


  • 1Sauté veggie until they are soft and the onions are translucent in a dash of olive oil over medium heat in a heat resistant fry pan.
  • 2Set oven to broil.
  • 3Add spices, mix.
  • 4Add beer, reduce heat to medium low and simmer until about half of the liquid has cooked away.
  • 5Add handfuls of cheese to mix and stir constantly until thoroughly melted and blended. Repeat until all the cheese is mixed in.
  • 6Place fry pan in oven uncovered for 5-10 mins. Until slightly browned.
  • 7Serve with tortilla chips.
