My sons love this for a snack over the weekend.

Ingredients

  • 1 - diced onion
  • 2-3 - roma tomatoes, diced
  • 5-6 - serrano chiles, diced
  • 1 cup pale lager (beer)
  • 1 tablespoon oregano, dried
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 8 ounces sharp cheddar cheese, fine shredded
  • 8 ounces monterey jack cheese, shredded

How To Make spicy queso

  • Step 1
    Sauté veggie until they are soft and the onions are translucent in a dash of olive oil over medium heat in a heat resistant fry pan.
  • Step 2
    Set oven to broil.
  • Step 3
    Add spices, mix.
  • Step 4
    Add beer, reduce heat to medium low and simmer until about half of the liquid has cooked away.
  • Cheese dip just before it is broiled
    Step 5
    Add handfuls of cheese to mix and stir constantly until thoroughly melted and blended. Repeat until all the cheese is mixed in.
  • Step 6
    Place fry pan in oven uncovered for 5-10 mins. Until slightly browned.
  • Step 7
    Serve with tortilla chips.
