My Mom was from the south and loved Pimento Cheese in celery and deviled eggs for holidays.

Ingredients For southern pimento deviled eggs

  • 6 lg
    eggs
  • 6 Tbsp
    mayonnaise
  • 5 Tbsp
    sharp cheddar cheese, finely grated
  • 2 Tbsp
    roasted red bell pepper, chopped finely
  • 1 1/2 tsp
    dijon mustard
  • green onions, green part only, sliced thinly on the diagonal
  • paprika, to sprinkle on eggs
  • bacon bits to sprinkle on eggs

How To Make southern pimento deviled eggs

    Cook eggs covered in water in a medium sized stainless steel pan. Bring to a boil and let cook for 1 minute. Put on a lid and place on hot pad off of stove for 10 minutes.

    Drain off the water and let cool enough to handle eggs. Peel egg shells off of eggs. Slice eggs in half saving all of the egg yokes.

    Mix together the mashed up egg yolks, mayonnaise (use more if you want for personal preference), Cheddar cheese, minced red bell pepper, and mustard. Add salt and pepper to taste.

    Fill egg halves with yolk mixture and place on serving tray. Sprinkle eggs with paprika, green onions, and bacon bits. Keep refrigerated until ready to serve.
