Serve with tortilla chips or toasted french bread slices. I have made this for many parties and gatherings and I can't tell you how good it is the next day because there is never any left even when I have doubled it for a larger crowd. Great appetizer for your Vegan friends.

Ingredients
- 1 7oz jars roasted red peppers drained and diced
- 3/4 pound shredded monterey jack cheese
- 1 8oz packages cream cheese softened
- 1 cup mayonnaise
- 1 clove garlic minced
- 2 tablespoons prepared dijon mustard

Step 1Preheat oven to 350 degrees F

Step 2In a small baking dish, mix the roasted red peppers, Monterey Jack cheese, cream cheese, mayonnaise, garlic and Dijon-style mustard.

Step 3Bake in the preheated oven 20 minutes, or until bubbly and lightly browned. Serve warm.
