remix layered mexican cheese dip

This is delicious and a real crowd pleaser! I always double the recipe unless I'm serving several other dips or appetizers. I made a few changes to the original recipe to reduce some of the fat, and it was still fantastic!

Ingredients

  • 1/2 pound cooked and chopped chorizo, drained well
  • 1 cup rotisserie chicken, chopped
  • 1/2 cup vidalia onion, diced
  • 3 - sprays of olive oil
  • 2 cans fat free refried beans
  • 1 package taco seasoning
  • 4 ounces reduced fat mexican blend cheese
  • 6 ounces montery jack cheese, shredded
  • 1/4 cup plum tomatoes, chopped
  • 1/4 cup green onion, white & green, chopped
  • - reduced fat sour cream

How To Make remix layered mexican cheese dip

  • Step 1
    Preheat oven to 350 degrees. Lightly spray an 8X8" pan with cooking spray.
  • Step 2
    Saute the sweet onion in non-stick pan, sprayed with the olive oil until slightly browned.
  • Step 3
    Layer ingredients: 1) refried beans with the onions; 1/3 of the Monterey Jack, all of the sweet onions, chicken, Mexican blend cheese and chorizo. Top with the remainder of the Monterey Jack.
  • Step 4
    Bake for 25 minutes.
  • Step 5
    Top with the tomatoes and the green onions. Serve with sour cream and tortilla chips or your favorite crackers.
