Ingredients For red onion jam and gorgonzola tartlets

  • 1 Tbsp
    olive oil
  • 4 c
    chopped red onions (approx 2 onions)
  • 3 clove
    garlic, minced
  • 1/2 c
    red wine vinegar
  • 1 tsp
    minced fresh thyme
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 c
    granulated sugar
  • 1 Tbsp
    brown sugar
  • 2 pkg
    mini phyllo shells (15 shells each, such as athens)
  • 5 Tbsp
    gorgonzola cheese, crumbled

How To Make red onion jam and gorgonzola tartlets

    Preheat oven to 350.
  • 2
    Saute onions and garlic in olive oil over medium heat, 20 minutes. Stir in next 6 ingredients. Bring to a boil. Reduce to simmer. Cook 5 minutes, until most of the liquid as evaporated. Cool.

    Place phyllo shells on pan; spoon 1/2 teaspoon Gorgonzola into each. Top with 1 teaspoon of jam. Bake 10 minutes and serve.
