Ingredients

1 Tbsp
olive oil
4 c
chopped red onions (approx 2 onions)
3 clove
garlic, minced
1/2 c
red wine vinegar
1 tsp
minced fresh thyme
1/2 tsp
salt
1/2 tsp
pepper
1/4 c
granulated sugar
1 Tbsp
brown sugar
2 pkg
mini phyllo shells (15 shells each, such as athens)
5 Tbsp
gorgonzola cheese, crumbled

How to Make Red Onion Jam and Gorgonzola Tartlets

Step-by-Step

  • 1Preheat oven to 350.
  • 2Saute onions and garlic in olive oil over medium heat, 20 minutes. Stir in next 6 ingredients. Bring to a boil. Reduce to simmer. Cook 5 minutes, until most of the liquid as evaporated. Cool.
  • 3Place phyllo shells on pan; spoon 1/2 teaspoon Gorgonzola into each. Top with 1 teaspoon of jam. Bake 10 minutes and serve.
