pumpkin ricotta tortilla wraps

This is like a mock pumpkin cannoli. Something I came up with with the little extras I had on hand in my pantry. This is great for the fall holidays, served for dessert or as appetizers using mini tortillas.

Ingredients

  • 4 - flour tortillas
  • 1/2 cup ricotta cheese
  • 2 teaspoons canned pumpkin
  • 4 teaspoons powdered sugar
  • 1/2 teaspoon pumpkin pie spices
  • 1.4 teaspoons vanilla extract

How To Make pumpkin ricotta tortilla wraps

  • Step 1
    Blend with hand mixer all ingredients but tortillas. Spread 2 tablespoons pumpkin mix in each tortilla and wrap like a burrito. Place on butter baking sheet, brush with alittle butter and place under broiler, watch carefully, brown for 1-2 minutes.
