I sometimes shape this like a pinecone and layer with whole almonds during the holidays - it always gets favorable comments. You can use any dried fruit in place of the Craisins. Serve with a nice assortment of crackers like Triscuits, Sociables, Ritz or any of your favorites.

We love a delicious cheese ball recipe during the holiday's and this one is delightful. It's sweet from the pineapple with a bit of tartness from the cranberries. Super creamy, the saltiness from the cheddar cheese balances out the sweetness from the fruit. Pecans with their nuttiness and crunch are perfect. Serve with slices of toasted baguette and you have an impressive and easy party appetizer.

Ingredients

  • 8 ounces block cream cheese, room temperature
  • 2 cups shredded cheddar cheese, room temperature
  • 8 ounces can crushed pineapple, well drained
  • 1/2 - 1 cups Craisins (to your taste)
  • 1 pinch cinnamon
  • - chopped pecans – as much as you need to cover the cheese ball

How To Make pineapple cheese ball with craisins

  • Cream cheese and cheddar cheese in a bowl.
    Step 1
    Mix the cheeses together using an electric mixer until very well blended.
  • Pineapple and cinnamon added to the mixed cheese.
    Step 2
    Add the drained pineapple and cinnamon.
  • Pineapple mixed into cheese.
    Step 3
    Mix into the cheese using the mixer.
  • Mixing in Craisins to the cheese.
    Step 4
    Add the Craisins and mix.
  • Cheese mixture mixed in the bowl ready to chill.
    Step 5
    Place the cheese mixture in the refrigerator for 2-3 hours until well-chilled.
  • Cheese mixture rolled into a ball.
    Step 6
    Roll the cheese mixture into a ball.
  • Rolling ball into chopped nuts.
    Step 7
    Roll the ball in the chopped nuts until covered on all sides.
