~ Pimento Cheese Spread With A Kick ~

This is my husbands favorite way of eating pimento cheese spread....he loves the kick that the pepper jack gives compared to the normal cheddar cheese used. It can be served as a cheese spread for crackers or a sandwich spread.

  • 1 c
    each - fresh shredded sharp cheddar cheese and fresh shredded pepper jack cheese
  • 1 1/2 Tbsp
    well drained pimento's
  • 4 oz
    softened, cream cheese
  • 1/4 c
    good mayonnaise
  • salt
    and pepper to taste
  • red
    pepper flakes to taste - optional

How to Make ~ Pimento Cheese Spread With A Kick ~


  1. In a bowl, mix together the cream cheese, both shredded cheeses, pinch of salt and pepper. Fold in the pimento and mayonnaise. Add pepper flakes for more heat if desired.

    I shaped into a ball and serve with crackers. Can also be spread on bread for a sandwich.
