pepperoni pizza-like bites

I wanted something light and quick, either for lunch or snacks. Just made this tonite again. BF loves this for a late snack. I also love to tweak my own recipes, as you can see in my notes below. I never make my recipes the same, depends what I have on hand. Makes them more appealing.

Ingredients

  • 3/4 cup all purpose flour
  • 1 cup milk
  • 1 - egg, lightly beaten
  • 8 ounces block cheese [colby, cheddar, swiss or muenster], cubed in small cubes
  • 4-6 ounces turkey pepperoni, slices quartered
  • 1/4 cup red onion, finely diced
  • 1/8 teaspoon salt [optional]
  • 1/8 teaspoon pepper [optional]
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon mccormics roasted garlic w/bellpepper

How To Make pepperoni pizza-like bites

  • Step 1
    1. Preheat oven to 350 derees.
  • Step 2
    2. Spray a 8x8 square pan.
  • Step 3
    3. Combined flour with spices, whisk together.
  • Step 4
    4. In a larger bowl, beat the egg and milk.
  • Step 5
    5. Whisk the flour into the milk and egg, until thoroughly blended.
  • Step 6
    6. Add the cheese, pepperoni and onion; mix well.
  • Step 7
    7. Pour into pan. Bake for 20 - 25 minutes, until top is a nice golden brown.
  • Step 8
    8. Remove from oven, cool slightly and serve; cutting into squares.
  • Step 9
    Notes: May be served with pizza or chili sauce. May also be served with a small salad on the side. Ham may be sustituted for the pepperoni, but pepperoni gives it that extra kick or even also add some browned italian sausage. Extra meat won't hurt. Maybe also some finely chopped red pepper. This maybe be doubled, using a 9x13 pan - bake about 25-30 minutes. - - - Enjoy!
