fill these with ANYTHING. i like goat cheese and roasted red peppers. but honestly, they're just an extremely jazzy cracker--entirely up to you! also, you can skip the molding part and just crumble them up into your salad instead of croutons! yum!

How to Make parmesan baskets

Step-by-Step

  1. put several "piles" of parm on a greased cookie sheet. (just like you were making cookies).
  2. bake at 350, checking every few minutes, until they spread out and brown a little around the edges.
  3. using a spatula, take one off, turn it upside down for a few seconds on anything you have on hand (i use a salt shaker), and repeat with the rest of them. (work fairly quickly).
  4. transfer baskets to a plate, fill with whatever you want, and serve immediately. they don't keep very well, unless in an airtight container.
