my simple but elegant mini brie & apple quiches
Woody and I love the way Brie and Apples taste together so we came up with this recipe after a party we attended a few weeks ago where the hostess had a covered baked brie and sliced apples on the side. The combination of the two was great. To save us some time we bought ready made mini phyllo shells at our local supermarket in the frozen dessert section. At our last gathering our guest loved them and ask us for the recipe.

Makes 30 quiches
Ingredients
- 2 - 1 9/10 punce packages of mini phyllo shells (30)
- 1/2 - apple, peeled and diced
- 5 - eggs
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt
- - a pinch of pepper
- - a pinch of ground nugmeg
- 1 - small brie (4 ounces)cut into 30 one inch squares
How To Make my simple but elegant mini brie & apple quiches

Step 1Preheat oven to 350 degrees.

Step 2Arrange phyllo shells on a large parchment lined baking sheet.

Step 3Divid the apple among the shells.

Step 4In a bowl, whisk eggs, mustard, salt, pepper and nutmeg until well blended.

Step 5Pour the egg mixture over the apples (do not overfill the shells)

Step 6Place Brie square on each shell.

Step 7Place in oven and bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges for about 15 minutes. Watch not to burn.

Step 8Remove from oven and let cool slightly.

Step 9Place on serving tray or plate.

Step 10* we think that these little treats can't be more than 30 to 40 calories with little fat.
