Put a little Mardi Gras into your game day celebration with these delicious little sandwiches. They're a mini version of the New Orleans classic muffuletta and are extra fun because they're made from toaster waffles. They pack all the punch of the traditional fave with none of the fuss. Score!

What a fun way to add a little Cajun to your appetizer table. We love using mini waffles as bread. Their sweetness helps to balance out the saltiness of the olive salad, ham, and salami. These are super quick to make so you can spend less time in the kitchen and more time at your Mardi Gras party. If you can't find mini waffles at your supermarket (we had an issue), buy regular size waffles and cut them smaller with a circular biscuit or cookie cutter.
Ingredients
- 1 box frozen mini waffles
- 1/2 cup mayonnaise
- 10 slices provolone cheese
- 1 pound sliced deli ham
- 1/2 pound hard salami, sliced
- 1 can black olives (6.5 oz)
- 1 cup green olives with pimentos
- 1 tablespoon fresh lemon juice
- 2 teaspoons red wine vinegar
- 1/8 teaspoon salt
- 1 tablespoon fresh oregano, chopped
How To Make micro muffulettas

Step 1Make the olive salad by coarsely chopping the olives and combining them with the lemon juice, salt, red wine vinegar, and oregano.

Step 2Toast the waffles according to package directions and cut them apart into individual waffles.

Step 3Cut each cheese slice in half and fold each half.

Step 4On half of the waffles, stack the cheese, salami, and ham.

Step 5Top with olive salad.

Step 6Spread mayo on the other half of the waffles and top the sandwiches.
