Newly married and looking to build my own cookbook of family favorites, the hubby's aunt slipped me this recipe. "It's a requested favorite when I have to bring something to a party", she said. And, she was right - it's simple, but the flavors meld into something addicting. We re-tried it recently, to see if it was still magical (it is), but ended up with a lot of leftovers - so we used it as a base for pizza (like, instead of a red sauce). And THAT was fantastic, too!

Ingredients

  • 8 ounces sour cream (greek yogurt?)
  • 8 ounces cream cheese
  • 1 small can chopped ripe olives
  • 1 small can chopped green chilies
  • 8 ounces shredded cheddar cheese
  • green onions, chopped
  • 1 teaspoon garlic salt
  • 1 teaspoon seasoning salt
  • 5 large tortillas

How To Make mexican rollups

  • Step 1
    Mix first 8 ingredients.
  • Step 2
    Spoon approximately 1/2 cup of mixture onto tortilla. Spread evenly over 2/3 of tortilla. Roll tortilla up. Wrap in a wet paper towel.
  • Step 3
    Refrigerate for a couple of hours.
  • Step 4
    Unwrap tortilla rolls and slice into 1/2" pieces. Serve with salsa or picante sauce.
