My sister made these on New Year's Eve. Everyone loved them. I got her recipe and tweaked it a little to my liking. Hope you like it, too.

Ingredients
- 3/4 cup yellow cornmeal
- 1/2 cup all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper, powdered ( can also use red pepper flakes, if you prefer)
- 8 ounces pepper jack cheese, shredded
- 1 can choppped green chiles, mild, drained
- 2 tablespoons red onion, minced
- 1 - egg
- 1/2 cup milk
- - vegetable oil, for frying
How To Make mexican hush puppies

Step 1Combine first 8 ingredients in a large bowl; make a well in center of mixture.

Step 2Combine egg and milk.

Step 3Add to dry ingredients, stirring just until moistened.

Step 4In a dutch oven, pour about 3 inches of oil. Heat to 375F.

Step 5Carefully drop batter by rounded tablespoonsful into hot oil.

Step 6Fry a few at a time 3 to 4 minutes or until golden brown, turning once.

Step 7Drain on paper towels.

Step 8Serve while hot with any dip or sauce you prefer.
