mascarpone substitute

I live in a backward rural area, that doesn't even know what mascarpone is. So I needed to find a substitute, or go without making some of the recipes that I was dying to try. After some searching, I found this substitution recipe. Thought I would share it here to help any others in the same situation I was in!
