Great to keep on hand in the refrigerator for a quick fix when someone stops over. Just serve on hot toasted French bread with a little of the oil from the jar. Marinated feta is also nice added to a pasta or lettuce salad.

Ingredients

  • 3/4 pound feta cheese
  • 2 cloves garlic
  • 1/2 teaspoon mixed peppercorns
  • 8 - coriander seeds
  • 1 - bay leaf
  • - fresh oregano, thyme and rosemary sprigs
  • - olive oil, extra virgin, to cover
  • - french bread toasted to serve

How To Make marinated feta cheese

  • Step 1
    With a sharp knife cut feta into cubes. Cut garlic into thick slivers.
  • Step 2
    With a mortar and pestle, lightly crush peppercorns and coriander seeds.
  • Step 3
    Into a jar with a tight-fitting lid, pack feta cubes with the bay leaf, interspersing layers of cheese with garlic, peppercorns and sprigs of fresh herb.
  • Step 4
    Pour in enough olive oil to cover cheese. Cover and refrigerate 2 weeks.
  • Step 5
    Serve on hot toast sprinkled with a little of the oil from the jar.
