Marinated Cheese

Ingredients

1/2 colive oil

1/4 cwhite wine vinegar

1/4 cfresh lime juice

1/3 croasted red peppers, chopped (from a jar)

3green onion, chopped

3 Tbspfresh parsley, chopped

3 Tbspfresh cilantro, chopped

1 tspsugar
-
1/2 tspsalt
-
1/2 tspblack pepper

8 ozeach of three cheeses, cut into small squares, (cheddar, cream cheese, pepper jack - whatever you like)
How to Make Marinated Cheese
- Whisk together olive oil, vinegar, and lime juice. Stir in diced red peppers and next 6 ingredients. Set aside.
- Arrange the squares of cheese into a dish you will be serving it in. Pour marinade over cheese. Cover and chill up to 8 hours.
- Bring to room temperature. Serve with a variety of crackers or sliced baguette.
Note: You can use just about any cheese you like. I have used Havarti, Monterrey Jack, Cheddar, Cream Cheese. Enjoy!!
