Ingredients
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 1/4 cup fresh lime juice
- 1/3 cup roasted red peppers, chopped (from a jar)
- 3 - green onion, chopped
- 3 tablespoons fresh parsley, chopped
- 3 tablespoons fresh cilantro, chopped
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces each of three cheeses, cut into small squares, (cheddar, cream cheese, pepper jack - whatever you like)
How To Make marinated cheese

Step 1Whisk together olive oil, vinegar, and lime juice. Stir in diced red peppers and next 6 ingredients. Set aside.

Step 2Arrange the squares of cheese into a dish you will be serving it in. Pour marinade over cheese. Cover and chill up to 8 hours.

Step 3Bring to room temperature. Serve with a variety of crackers or sliced baguette. Note: You can use just about any cheese you like. I have used Havarti, Monterrey Jack, Cheddar, Cream Cheese. Enjoy!!
