Ingredients

  • 1/2 c
    olive oil
  • 1/4 c
    white wine vinegar
  • 1/4 c
    fresh lime juice
  • 1/3 c
    roasted red peppers, chopped (from a jar)
  • 3
    green onion, chopped
  • 3 Tbsp
    fresh parsley, chopped
  • 3 Tbsp
    fresh cilantro, chopped
  • 1 tsp
    sugar
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • 8 oz
    each of three cheeses, cut into small squares, (cheddar, cream cheese, pepper jack - whatever you like)

How to Make Marinated Cheese

Step-by-Step

  1. Whisk together olive oil, vinegar, and lime juice. Stir in diced red peppers and next 6 ingredients. Set aside.
  2. Arrange the squares of cheese into a dish you will be serving it in. Pour marinade over cheese. Cover and chill up to 8 hours.
  3. Bring to room temperature. Serve with a variety of crackers or sliced baguette.
    Note: You can use just about any cheese you like. I have used Havarti, Monterrey Jack, Cheddar, Cream Cheese. Enjoy!!
