1/2 c
olive oil
1/4 c
white wine vinegar
1/4 c
fresh lime juice
1/3 c
roasted red peppers, chopped (from a jar)
green onion, chopped
3 Tbsp
fresh parsley, chopped
3 Tbsp
fresh cilantro, chopped
1 tsp
1/2 tsp
1/2 tsp
black pepper
8 oz
each of three cheeses, cut into small squares, (cheddar, cream cheese, pepper jack - whatever you like)

How to Make Marinated Cheese


  • 1Whisk together olive oil, vinegar, and lime juice. Stir in diced red peppers and next 6 ingredients. Set aside.
  • 2Arrange the squares of cheese into a dish you will be serving it in. Pour marinade over cheese. Cover and chill up to 8 hours.
  • 3Bring to room temperature. Serve with a variety of crackers or sliced baguette.
    Note: You can use just about any cheese you like. I have used Havarti, Monterrey Jack, Cheddar, Cream Cheese. Enjoy!!
