This is not one of my easier recipes but is an elegant appetizer for any occasion. Very tasty!

Ingredients

  • 1 cup olive oil
  • 1 cup red wine vinegar
  • 1/2 cup sugar (to more to taste); use your judgment
  • 1 small jar pimientos
  • - little fresh parsley
  • 1 - 2 teaspoons chopped garlic
  • 1 package (whol) colby jack cheese
  • 2 packages (8 oz.) cream cheese

How To Make marinated cheese - steph

  • Step 1
    Step 1 - Marinade: olive oil, red wine vinegar, sugar, pimientos, fresh parsley, chopped garlic; mix all ingredients well.
  • Step 2
    Place cream cheese in freezer about 20 minutes to chill. Cut the Colby Jack Cheese and Cream CHeese in half lengthwise. Slice about 1/8" thick. Layer in logs alternating Colby Jack and Cream Cheese.
  • Step 3
    Pour 3/4 marinade over the cheese. Chill overnight. Pour remaining marinade over cheeses just before serving. Serve with Wheat Thins. Makes a lot. ENJOY!
