marinated cheese appetizer
Easy to make, good, and an appetizer that impresses people, at least here in my home town. I got this recipe from a magazine (which one I don't remember) a few years ago.

Ingredients
- 1 pound cheese, cheddar or pepper jack, cut in cubes
- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- 3 tablespoons chopped fresh parsley
- 3 tablespoons minced fresh green onions
- 1 teaspoon sugar
- 1/4 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 cloves minced garlic
- 1 jar (2 ounce) pimentos, drained and chopped

Step 1Buy cubed cheese to make this recipe quick and easy. You can use any cheese you like.

Step 2Place cheese in a large bowl and set aside. Place all remaining ingredients in a jar, place lid on jar tightly and shake to combine everything well. pour marinade over cheese, stir to coat all, cover bowl and refrigerate for at least 8 hours, preferably overnight.

Step 3Arrange cheese on serving tray. Spoon some marinade over all, and serve with toothpicks on side.

Step 4Great with crackers and fresh veggies.
