little reuben appetizers

These are so nice to serve for St. Patrick's Day. They are simple to make and everyone seems to love them. A friend gave me this recipe last year and I make them whenever I need to take an appetizer to a dinner.

Ingredients

  • 1 package appetizer size deli rye bread
  • 1 cup prepared thousand island salad dressing
  • 1/2 pound deli style corned beef, sliced thin
  • 1 package sauerkraut, from deli or canned, well drained
  • 1/2 pound thinly sliced swiss cheese

How To Make little reuben appetizers

  • Step 1
    Preheat oven to 350 degrees. Separate bread slices and spread out on an ungreased cookie sheet.
  • Step 2
    Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.
  • Step 3
    Bake for 10 to 12 minutes or until cheese is melted and bubbly. Serve warm from the oven.
