My girlfriend's husband loves when I make this, and it is my most requested recipe if I'm attending a get together.

  • 8 oz
    cream cheese, softened
  • 1/4 c
    minced green bell pepper
  • 1/4 c
    minced red bell pepper
  • 1 pinch
  • 1/4 c
    minced sweet onion
  • 4 oz
crushed pineapple, drained, reserve a small amount of juice
  • 1 Tbsp
  • 1/2 c
    chopped pecans or walnuts, divided

How to Make Kathie's Cheese Ball

  1. Mash up cream cheese, and stir in all ingredients, using 1/4 the amount of nuts. Mix well. Use a very small amount of the pineapple juice to thin out the mixture, if needed.
  2. Chill for a short amount of to firm up, then shape into a ball. Chill at least one hour. I usually wrap it in saran wrap sprayed with Pam to keep it from sticking, or it can be placed in a small round bowl to retain shape.
Just before serving, remove from saran wrap or bowl, roll cheese ball in the remaining chopped nuts and place on serving dish.
Serve with your choice of crackers.
