This is what I am famous for, the most requested appetizer from my dinner guests. When you have fresh mozzarella, prosciutto, roasted red peppers all wrapped up in puff pastry, what can I say.

Ingredients
- 6-12 - fresh mozzarella balls, i use the small ones or you can buy one large ball and cut it into 6 or 12 pieces
- 6-12 slices prosciutto
- 6-12 slices roasted red peppers
- 1-2 sheet puff pastry sheet, thawed
- - good quality tomato basil sauce, you can use homemade which i do or buy it in a jar

Step 1Preheat oven 400 Lay out one puff pastry sheet and cut it into 6 squares. Take one mozzarella ball and wrap one slice of roasted pepper around it then wrap one slice of prosciutto around the roasted pepper. Now put that ball in the center of the puff pastry square. With your finger dipped in water, wet the edges of the pastry, now gather up the pastry around the mozzarella ball twist and pinch to seal. Place on an ungreased cookie sheet. I prefer to use parchment paper on my cookie sheet. Make sure the pastry is completely sealed.

Step 2Bake 15-20 minutes or until golden.

Step 3Place 2 tablespoons of warm tomato basil sauce on the bottom of a small dish, then place one puff pastry ball in the center. Serve while hot. You can use 2 puff pastry sheets to make 12 appetizers.
