This tasted just like the poppers I make only with a crust! NOTE: Prep time does not include cooking bacon or making dough from scratch.

Ingredients

  • - pizza dough, see note below
  • 8 oz - cream cheese, room temperature
  • 4 oz - cheddar, grated
  • 4 oz - monterey jack cheese, grated
  • 4 oz - cotija cheese, crumbled
  • 1/2 - red bell pepper, diced finely
  • 2 tbsp - sweet onion
  • 2-3 - fresh jalapenos, sliced into rings
  • 2-3 slices - bacon, cooked and crumbled

How To Make jalapeno popper pizza

  • Step 1
    I recommend using or rolling your dough out thinly. You could make two pizza's with this amount of cheese, but I wanted to really get a popper flavor, so I used a LOT of cheese on just one pizza.
  • Step 2
    Bring cream cheese to room temp and place in mixing bowl with the other cheeses, diced red bell pepper and diced onion. Mix till well combined. NOTE: You can add diced jalapeno to the cheese if desired. Also you can use any white melting cheese instead of Monterrey Jack.
  • Step 3
    Place dough on a pizza pan or in a cast iron skillet. Spread cheese mixture out over dough. Add sliced (rings) of fresh jalapeno and crumbled bacon on top.
  • Step 4
    Bake till cheese is melted and bubbly. I used a 12" cast iron skillet, baked at 425º for 30 min. Cool slightly then slice and enjoy.
