In large bowl shred cheddar cheese and use fork (or clean hands) to blend well with cream cheese. Add 1/2 cup pecans and all other ingredients.
Refrigerate for about 30 minutes so cheese mixture will form better.
Form into one large or two smaller balls and roll in pecan pieces.
Refrigerate for at least one hour before serving. Better if refrigerated 24 to 48 hours prior to serving.
Serve with crackers.
