We love the pub cheese at Trader Joe's, but didn't want to drive to get it. So I hopped in the kitchen to see if I could recreate it. A friend says she likes this one better. We like the strong horseradish taste, but adjust all the seasonings to your preference.

Imagine a beer cheese combined with a healthy portion of horseradish, and that's what you get with this horseradish cheddar pub cheese. It's a zesty dip that's hard to stop eating. It is perfect with a buttery cracker to offset the spice of the dip. But we think carrots or celery would be great too. The horseradish flavor is very strong in this dip. So, if you don't like it, this may not be the snack for you.

Ingredients

  • 8 ounces softened cream cheese
  • 1 tablespoon mustard
  • 3 tablespoons horseradish or to taste
  • 1/2 cup stout ale
  • 1 pinch cayenne pepper
  • 1 tablespoon vinegar
  • 2 dashes tabasco
  • 1 pinch ground black pepper
  • 4 cups shredded sharp cheddar cheese

Test Kitchen Tips
We started with 2 Tbsp of horseradish and felt like that was plenty. We suggest adding 1 Tbsp at a time. The first time we tried this, we blended until the cheese was smooth. The second time, we left the cheese with more chunks. Adjust the blending to suit your needs.
  • To a food processor, add all ingredients except the cheese.
    Step 1
    In a food processor, combine everything but the cheese. Blend well.
  • Add the grated cheese.
    Step 2
    Add the grated cheese.
  • Pulse a few times.
    Step 3
    Pulse a few times until it is combined.
  • Serve immediately or chill.
    Step 4
    Serve immediately or cover and chill for a few hours.
