herb stuffed mushrooms

Got this one from Elana Amsterdam but added a few things to suit my tastes. I used the herbs from my garden. It's very rich, so a little goes a long way. I baked these in my toaster convection oven.

Ingredients

  • 1 pound white button mushrooms
  • 8 ounces brick goat cheese
  • 1/4 cup minced parsley
  • 1 tablespoon minced chives
  • 1/2 cup basil chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon better than bouillon (turkey flavor)

How To Make herb stuffed mushrooms

  • Step 1
    Heat oven to 350'F. Clean the mushrooms with a brush or paper towel.
  • Step 2
    Remove the stems from the mushrooms. Cut a piece of parchment and line your baking sheet with it.
  • Step 3
    Set the mushrooms on the sheet.
  • Step 4
    Place the cheese, parsley,chives,basil,garlic and bouillon in a food processor and process until well blended. This should be a rich green shade.
  • Step 5
    Put a teaspoon of the mixture in each of the mushrooms.
  • Step 6
    Bake for 20-25 minutes, until edges of goat cheese are slightly brown.
  • Step 7
    Cool and Serve.
