Herb Stuffed Mushrooms

Got this one from Elana Amsterdam but added a few things to suit my tastes. I used the herbs from my garden. It's very rich, so a little goes a long way. I baked these in my toaster convection oven.

  • 1 lb
    white button mushrooms
  • 8 oz
    brick goat cheese
  • 1/4 c
    minced parsley
  • 1 Tbsp
    minced chives
  • 1/2 c
    basil chopped
  • 1 Tbsp
    minced garlic
  • 1 tsp
    better than bouillon (turkey flavor)

How to Make Herb Stuffed Mushrooms


  1. Heat oven to 350'F.

    Clean the mushrooms with a brush or paper towel.
  2. Remove the stems from the mushrooms. Cut a piece of parchment and line your baking sheet with it.
  3. Set the mushrooms on the sheet.
  4. Place the cheese, parsley,chives,basil,garlic and bouillon in a food processor and process until well blended. This should be a rich green shade.
  5. Put a teaspoon of the mixture in each of the mushrooms.
  6. Bake for 20-25 minutes, until edges of goat cheese are slightly brown.
  7. Cool and Serve.
  8. Enjoy!
