Herb Stuffed Mushrooms

Got this one from Elana Amsterdam but added a few things to suit my tastes. I used the herbs from my garden. It's very rich, so a little goes a long way. I baked these in my toaster convection oven.

1 lb
white button mushrooms
8 oz
brick goat cheese
1/4 c
minced parsley
1 Tbsp
minced chives
1/2 c
basil chopped
1 Tbsp
minced garlic
1 tsp
better than bouillon (turkey flavor)

How to Make Herb Stuffed Mushrooms


  • 1Heat oven to 350'F.

    Clean the mushrooms with a brush or paper towel.
  • 2Remove the stems from the mushrooms. Cut a piece of parchment and line your baking sheet with it.
  • 3Set the mushrooms on the sheet.
  • 4Place the cheese, parsley,chives,basil,garlic and bouillon in a food processor and process until well blended. This should be a rich green shade.
  • 5Put a teaspoon of the mixture in each of the mushrooms.
  • 6Bake for 20-25 minutes, until edges of goat cheese are slightly brown.
  • 7Cool and Serve.
