goat cheese-pistachio cheeseball

I found this recipe on page 152 of the Nov. 1, 2011 edition of Family Circle magazine (LOVE that mag!!!) and tried it out on company Sunday night. They raved! It was quick, delicious and easy! Thank you Family Circle. Please do try this creamy and slightly sweet cheeseball.

Ingredients
- 4 ounces goat cheese (room temp)
- 8 ounces cream cheese(room temp)
- 2 tablespoons honey
- 2 teaspoons fresh chopped thyme (i used parsley and it was good)
- 1/2 cup pistachio nuts, chopped (i used a little more)
How To Make goat cheese-pistachio cheeseball

Step 1Blend the cheeses, honey and thyme in a standing mixer (I used my Kitchen Aid with the paddle attachment) Mix on medium speed until combined.

Step 2Transfer the mixture to a work surface like a plastic cutting board using a spatula to get it out of the mixing bowl. Form it into a ball and then roll the ball in the pistachio nuts. Refrigerate for a couple of hours and serve.

Step 3Family Circle suggested using a toasted sliced baguette or crackers. I served it with Peperidge Farms Cracker Quartet and I have to say that this went really well on the Harvest Wheat crackers that came in the box! (
