fig & goat cheese squares
I first made this from a Smuckers recipe flyer in 2008. The original recipe calls for walnuts but my family prefer pecans. Note this square does not freeze well.

Makes 30 squares
Ingredients
- 2 cups mission or calimyrna figs
- 1 cup water
- 1/4 cup lemon juice
- 1 cup toasted pecans
- 1 1/3 cups flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon salt
- 1/2 cup butter, chilled and cut into small pieces
- 2 cups goat cheese, room temperature
- 2 medium eggs
How To Make fig & goat cheese squares

Step 1Preheat oven to 350 F. Grease a 13 x 9 inch baking dish.

Step 2In a medium saucepan, combine figs, water and lemon juice. Bring to a boil and cook 5 minutes at medium heat until figs are tender. Cool slightly,

Step 3Place fig mixture in a food processor or blender. Process until smooth. Add chopped pecans. Set aside.

Step 4In a large bowl, combine flour, brown sugar and salt. Stir to combine. Cut in butter until mixture resembles coarse meal. Press mixture in prepared dish. Gently spread fig mixture over crust.

Step 5In a separate bowl, beat goat cheese and eggs until smooth. Spread over fig mixture. Bake for 30 minutes or until set. Serve warm or at room temperature.

Step 6Tips: Add 1 tbsp chopped fresh rosemary to goat cheese mixture for a great appetizer. For a sweeter taste, add 1/2 cup sugar and 1 tsp vanilla to goat cheese mixture.
