My dear friend, Debbie J., used to bring this cheese ball to office functions. She found another job a few years ago, so I had to start making my own! I think hers always tasted better - probably because I didn't have to do any of the work! LOL! But mine is pretty good too...

2 c
cheddar cheese, shredded
8 oz
cream cheese, room temperature
1/2 tsp
minced garlic
4 - 6 Tbsp
pecans, optional
paprika, optional


1Dice onion into small pieces. NOTE: You may substitute 1 tbsp reconstituted or 1/2 - 3/4 tbsp onion powder if desired (or if that's all you have on hand)
2Combine cheddar cheese, cream cheese, garlic, and onion; mix well. NOTE: You may substitute 1/2 - 3/4 tbsp garlic powder if desired. (or if that's all you have on hand)
3Add mayonnaise a little at a time until the mixture is the desired consistency.
4Form into a ball.

Optional: Roll in pecans and/or sprinkle with paprika.
