chipotle cheese toast
I was wanting to make my honey a football game snack, but was limited by ingredients I had on hand. He is crazy about grilled cheese sandwiches, so I made him this. As I handed him his plate, he said, "This is for both of us, right? I can't eat all of this." I convinced him that it was all his, and he started eating, barely coming up for air!! I asked him if he had had enough, and he shook his head with a grin. So I made him another plate full, and it disappeared as quickly as the first, and he told me I could make this for him any time I want to. For such a simple dish, it's delicious.

Ingredients
- 2 slices good bread
- 4 slices medium cheddar cheese
- 1/4 - 1/2 teaspoon ground chipotle chili
- 8 small cherry tomatoes cut in half lengthwise
- 1 teaspoon parsley flakes
- 1 scallion ~ thinly sliced
- 1 tablespoon olive oil
- SURPRISINGLY FLAVORFUL!
How To Make chipotle cheese toast

Step 1Preheat oven to broil. Toast both sides of the bread under broiler until brown all over.

Step 2Top the toast with cheese slices, making sure that the cheese goes edge-to-edge.

Step 3Sprinkle with chipotle chili powder and parsley flakes over the cheese.

Step 4Arrange the tomato halves cut side down on top of cheese, using enough tomato that every bite has a bit of tomato.

Step 5Brush tomato skins with olive oil, and sprinkle salt on the tomatoes with salt.

Step 6Return to broiler and toast for about 2 minutes or until the cheese is thoroughly melted.

Step 7Remove from broiler and sprinkle with scallion slices.

Step 8Plate and serve.
