Ingredients

  • ·
    3 cups shredded monterey jack cheese
  • ·
    1 cup shredded mild cheddar
  • ·
    1 tbsp. cornstarch
  • ·
    1 tbsp.olive oil
  • ·
    1 tbsp. minced garlic
  • ·
    1 tsp. ground cumin
  • ·
    1/2 tsp. ground coriander
  • ·
    1/2 tsp. dried oregano
  • ·
    1 cup pale lager, such as corona
  • ·
    2 tbsp. chopped chipotles in adobo sauce
  • ·
    1/2 tsp. minced lime zest

How to Make Chili Cheese Fondue

Step-by-Step

  1. Toss together jack cheese, cheddar and cornstarch.
  2. Heat oil in large pan over medium low heat. Add garlic, cumin coriander and oregano. Cook til garlic softens, about 1 minute.
  3. Add lager and bring to a simmer over medium heat. Whisk in cheese mixture a handful at a time, letting each addition fully melt before adding the next. Whisk in chipotles and zest and transfer to a warm fondue pot. Makes 2 1/2 cups
